Cordyceps militaris: an Ascomycota species and notoriously finicky fungus with newfound consumer demand. I operated a farm for 2 years figuring out a scalable way to grow these mushrooms. We became USDA certified organic and extracted mushrooms in house. Below is tutorial that includes most of our research on cultivation & scaling.
